Default Bruschetta Pomodoro All'Amatriciana (****tail Party Recipes)




Prep Time: 30 minutes or less | Cook Time: 30 minutes or less | Serves: 4
Appetizers » Pork » Italian

Ingredients:



Panchetta (if you can't find any use bacon like I did)
- Onions
- garlic
- Tomatoes (I used yellow heirloom tomatos)
- French baguette

The photo to the right shows some ingredients not used in this recipe. This Bruschetta recipe was part of my full dinner:

Step 1:





Sadly I couldn't find any panchetta so I used bacon, but certianlly use the panchetta if you can. Anyway fry up strips.

Step 2:





Remove the bacon and dispose of some of the grease leaving a few tablespoons for the onions. Once the onions start browning add your garlic and sautee a bit more.

Step 3:





Remove the onion/garlic from the heat and place it in a bowl, then dice a tomato, in this case a rather homely and yummy looking very meaty yellow heirloom tomato.

Step 4:





Put the onion and tomato mixture on some toasted bread and add the panchetta (bacon in this case). Then broil them for 5 min.
